Ghee Rice

Ingredients 

Basmati Rice – 1 cup
Onion – 1(medium size)
Ghee – 5 tbsp
Cashew nuts -10
Green Chilli -4
Cardamom -2
Cinnamon – 2 inch
Cloves – 2
Curry leaves -2 sprigs
Mint leaves – a handful

Method

  1. Cook the rice in a cooker. I used 1.5 cups of water. While cooking the rice, add 1 tbsp ghee, salt, and a 1-inch cinnamon stick.

  2. Heat a kadai and add 4 tbsp ghee.

  3. Fry the cashew nuts and keep them aside.

  4. Deep-fry the onions and keep them aside.

  5. Add the spices, slit green chillies, curry leaves, and mint leaves together, and sauté until you get a nice aroma.

  6. Add the cooked rice to the kadai and mix well. (Add salt if required.)

  7. Garnish with the fried onions and cashew nuts.

Ghee rice is ready to serve!

Spicy Chicken

Ingredients 

Chicken -1/2 kg
Oil – 8 tbsp
Onion -2 big 
Chilli powder -1tbsp
Kashmiri chilli powder -1tbsp
Coriander powder -1tbsp
Garam masala – 1 tbsp
Jeera- 1/2 tbsp
Ginger garlic paste -2 tbsp
Turmeric powder- 1/4 tsp
Lemon-1/2
Ghee -1 tbsp
Curd-4tbsp
Kasoori methi – 1 tbsp
Salt – 1tsp 

Method

  1. Deep-fry the thin onion slices to make fried onions.

  2. Mix all the ingredients mentioned above with the chicken, along with the fried onions.

  3. Marinate for at least 2 hours.

  4. Sauté the marinated mixture in the remaining oil.

  5. Add salt according to your taste. Cover with a lid and cook for 5 minutes.

  6. After that, keep sautéing until the oil oozes out.

  7. Tasty, spicy chicken is ready to serve.

It goes well with ghee rice or chapati.
